Banana muffin

Sometimes, you suddenly find some ripped bananas, hmm…you consider what to do with: smoothie, pancake, or if too ripped, throw away? Oh wait, let’s try our banana muffin receipt:

 

Dry ingredients:

  • 8g baking powder
  • 8g ground cinnamon
  • 250g cake flour (or all-purpose flour)

* mix all the dry ingredient without any clumping

  • 5g poppy seeds

Wet ingredients:

  • 5 ripped bananas
  • 140g sugar (depends on your taste)
  • 2 eggs (around 100g)
  • 110g oil (or melting butter)

 

Reheat the oven at 185­­C.

Mash 5 bananas and mix with all the wet ingredients until becoming smooth. (I bet your kids really like this step…ask them to help you ;))

Add 5g poppy seeds to wet mixture.

Sprinkle all the dry ingredients into the wet mixture until smoothly.

You can use metal molds or paper cups.

With the molds I'm using, I bake for about 15 minutes, or until the cake rises high and golden.

I am sure that you won't be able to resist the delicious fragrance and spongy texture of the cake.
